Yiaourtopita translates to yogurt cake. It's a pound cake that is made with Greek yogurt & lemon zest.
Ingredients
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter (softened)
  • 3 cups of all-purpose flour
  • 3 large eggs
  • 1 cup non-fat Greek Yogurt
  • 3 tsp. baking powder
  • 2 Tbsp. lemon zest (or zest of 2 lemons)
Instructions
  1. Preheat oven to 350 F.
  2. Sift flour. Add baking powder and lemon zest to flour, and set aside.
  3. Use a mixer to cream butter and sugar together for about two minutes or until light and fluffy. Gradually, add yogurt and then the eggs one by one, while you continue mixing.
  4. Reduce speed to low, and slowly add the flour into the butter while mixer is still running. When everything is mixed properly, turn off the mixer.
  5. Pour the cake batter into a greased Bundt or tube cake pan, and bake for about 45 minutes to an hour, or until the center is properly cooked.
  6. When the cake is done, brush a little butter on the top, and sprinkle powder sugar.
Notes
If you like a more lemony taste, add more lemon zest.
