Mango cheesecake

Today we decided  to make mango cheesecake, to celebrate mango season. There are so many mangoes on the trees,  and we are getting inspired.

Mango cheesecake
Ingredients
  • 1½ cups graham cracker crumbs
  • ½ cup sugar
  • 6 tablespoons butter, melted
  • 4 large ripe mangoes, cubed
  • 3 (8-ounce) packages cream cheese, softened
  • 1¼ cups sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
Instructions
  1. Preheat oven at 325F.
  2. Use a large bowl to stir together graham cracker crumbs, sugar, and butter.
  3. Press cracker mix into bottom, and 1 inch up the sides of a buttered 9-inch springform pan. Bake for 12 minutes, then remove from oven and set aside.
  4. Puree mangoes in a food processor. Use a mixer to beat cream cheese, sugar,and vanilla together until smooth and fluffy. Add eggs one at a time, mixing well before each egg addition.
  5. Mix in mango puree.
  6. Pour batter into the baked crust. Bake at 325F for an hour and 25 minutes. Remove from oven, cool for an hour in pan using a wire rack . Then, cover and chill overnight or about 8 hours. Garnish & serve. Suggested garnishes: fresh mango slices, fresh berries, & fresh mint
