LOUKOUMADES

Loukoumades is a traditional Greek dessert that resembles the dough of donuts. The puffs are made with flour and yeast and they are deep fried and served with warm honey; a crispy, chewy, and delicious. treat.

As a child, birthdays and returns from travels were made extra special through the thoughtfulness and cooking of my grandpa. For grandchildren, like my sister and me, this fritter-like, cinnamon-sprinkled, and honey-drenched dessert had a magical way of gathering us all together, and leaving our friends eagerly waiting for more “Greek doughnuts”.

Ingredients
  • 3 cups lukewarm water
  • 2 tsp. active dry yeast
  • 4 cups flour
  • 1 Tbs. sugar
  • 2 tsp. pure vanilla extract
  • 1 tsp. salt
  • Grape seed oil or vegetable oil for frying
  • For garnish
  • Cinnamon
  • Honey
Instructions
  1. In a large mixing bowl, add the water and the yeast and mix until the yeast dissolves completely.
  2. Add flour, sugar, vanilla extract, and use high speed to whisk until the batter is smooth, without lumps.
  3. Add the salt, and mix well.
  4. Cover the bowl with saran wrap and let it rest somewhere warm for about 1 hour and 20 minutes. The dough will at least double in size.
  5. In a medium-deep saucepan add oil, enough to cover the puffs for deep-frying. Use high heat and wait until the oil gets sizzling hot. When the oil is ready, mix batter again with a spoon.
  6. Dip a teaspoon in a cup of water, then spoon out some dough and drop it into the hot oil without immersing the spoon in the oil.
  7. Repeat dipping the spoon into the water and putting spoonfuls of dough into the saucepan forming round balls.
  8. Using a slotted spoon, rotate each one until they are golden on all sides. Place the ready ones on a cookie sheet (use paper towels if you need to drain the oil).
  9. Repeat the deep- frying process, until all the dough is done.
  10. Place loukoumades in a serving platter, sprinkle some cinnamon and warm honey and serve.
