Fresh tomato bruschetta

Tomato bruschetta is a simple, but a very tasty appetizer to serve for any party.  This year, our garden has been producing a great variety of tomatoes and we have been using them in all kinds of recipes.  One of the things we love to make is bruschetta.

Ingredients
  • Bread
  • 1 6-oz loaf of French or Italian bread
  • 1 Tbsp olive oil
  • 6 round slices of mozzarella
  • Topping
  • 2 large plum tomatoes, minced
  • 3 garlic cloves, minced
  • 2 tsp minced fresh basil
  • 1 tsp minced thyme
  • 2 tsp olive oil
Instructions
  1. Preheat oven to 350 degrees.
  2. Cut the bread into 6 even slices, and place onto a cookie sheet.
  3. Brush each slice with olive oil, and add the mozzarella slices on top.
  4. Put cookie sheet in the oven and toast for 1-2 minutes.
  5. In the meantime, prepare the topping, by combining all ingredients, minced tomatoes, minced garlic, basil, thyme and the olive oil.
  6. Remove the bread from the oven and spread a teaspoon of topping over each slice of mozzarella and serve immediately.
