Chicken Cacciatore

During our visit to London one cold night, we decided to make a hearty meal and Chicken Cacciatore came to mind.  This is our recipe.

Chicken Cacciatore
Ingredients
  • 4 large chicken breast cut in strips
  • 3 Tbsp. Olive oil
  • 1 large red bell pepper cut in strips
  • 1 large yellow pepper cut in strips
  • 1 large onion chopped
  • 1 cup button mushrooms quartered
  • 4 cloves of garlic diced
  • ½ cup dry white wine
  • 1 (24 oz) can of zesty & spicy pasta sauce
  • 1 cup reduced sodium chicken broth
  • 2 tsp. dried oregano
  • ½ cup fresh basil leaves coarsely chopped (for garnish)
  • Sea Salt & Fresh ground pepper
Instructions
  1. In a large saucepan, heat the oil over medium heat.
  2. Add the chicken strips and sauté until brown, about 5-6 minutes on each side. Add some salt and pepper on the chicken.
  3. Remove chicken from the pan and set aside.
  4. In the same pan, add the chopped peppers, onion and garlic, and sauté until the onions and peppers are tender. Then add the mushrooms.
  5. Sprinkle some salt & pepper, add the oregano and wine.
  6. Cook until the wine is reduced to half. Then, add the tomato sauce, and chicken broth.
  7. Place the chicken strips back in the pan and stir them in the sauce until they are fully covered.
  8. Simmer over medium heat until chicken is cooked through and sauce reaches the desired thickness.
  9. Place in serving bowl, and garnish with the fresh chopped basil.
